Ingredients: | ||||
2 | Cup | Flour (All Purpose) | ||
1/3 | Cup | Sugar (Granulated) | ||
2 | Tsp. | Baking Powder | ||
1 | Tsp. | Orange Peel (Grated) | ||
1/3 | Cup | Pecan (Chopped) | ||
1/4 | Cup | Egg (Substitute) | ||
2 | Tbs. | Egg (Substitute) | ||
2 | Tbs. | Honey | ||
2 | Tbs. | Frozen Orange Juice Concentrate (Thawed) | ||
Instructions: | ||||
1. In a large bowl, combine flour, sugar, baking powder, and orange rind and stir to mix well. | ||||
2. Add the pecans if desired and stir to mix. | ||||
3. Add the remaining ingredients and stir just until the dough holds together. | ||||
4. Turn the dough onto lightly floured surface and shape into two 8x2" logs. | ||||
5. If the dough is too sticky to handle, knead in a little more flour. | ||||
6. Flatten the logs a little bit or else the crust will split and crack. | ||||
7. Coat a baking sheet with nonstick cooking spray. | ||||
8. Place the logs on a sheet. | ||||
9. Bake for about 23 minutes, or until lightly brown. | ||||
10. Transfer the logs to a wire rack and allow to cool for 10 min. | ||||
11. Reduce the oven temp to 300. | ||||
12. Place the logs on a cutting board and use a serrated knife to slice the logs diagonally into 1/2" thick slices. | ||||
13. Place the slices on a baking sheet and bake 20 minutes or until lightly browned, turning after 10 minutes. | ||||
