Ingredients: | ||||
1 | Cup | Butter | ||
1 | Cup | Sugar (Granulated) | ||
1 | Each | Egg | ||
1 1/2 | Tsp. | Lemon Peel (Shredded) | ||
2 1/4 | Cup | Flour (All Purpose) | ||
1/2 | Tsp. | Baking Powder | ||
12 | Drops | Food Coloring (Yellow) | ||
1/3 | Cup | Lemon Candies, Hard (Crushed) | ||
Instructions: | ||||
Dough |
||||
1. Beat butter with mixer on medium for 30 seconds. | ||||
2. Add sugar and baking powder and beat until combined. | ||||
3. Beat in egg and lemon peel. | ||||
4. Beat in as much flour as possible with mixer. | ||||
5. Add rest of flour by hand. | ||||
6. Divide dough in half. | ||||
7. Add food coloring and crushed candies to one half. | ||||
8. Divide halves in 2 again for a total of 4 piles. | ||||
9. Chill 1 hour. | ||||
10. Roll one portion of colored dough between 2 sheets of waxed paper into a 9x8in rectangle. | ||||
11. Repeat with one portion of plain dough. | ||||
12. Remove top pieces of waxed paper from each. | ||||
13. Place colored dough over plain. | ||||
14. Remove top piece of waxed paper. | ||||
15. Start at the 8in edge and roll like a jelly roll. | ||||
16. Press edges to seal. | ||||
17. Wrap in waxed paper. | ||||
18. Chill 4 hours. | ||||
Baking |
||||
19. Unwrap chilled dough and reshape if needed. | ||||
20. Slice 1/4in thick. | ||||
21. Place 2in apart on foil lined cookie sheet. | ||||
22. Bake 9 to 11 min until edges are lightly brown. | ||||
23. Cool on cookie sheet for 5 min. | ||||
24. transfer to wire rack. | ||||
