Ingredients: | ||||
3/4 | Cup | Butter (Unsalted) | ||
1 | Cup | Sugar (Granulated) | ||
1 | Each | Egg | ||
1 | Tbs. | Milk | ||
2 | Tsp. | Lemon Peel (Shredded) | ||
1/2 | Tsp. | Vanilla Extract | ||
1/2 | Tsp. | Lemon Extract | ||
2.25 | Cup | Flour (All Purpose) | ||
2 | Tbs. | Poppy Seeds | ||
1 | Cup | Sugar (Confectioners') | ||
1/4 | Tsp. | Vanilla Extract | ||
1 | Each | Food Coloring (Yellow) | ||
Instructions: | ||||
1. Beat butter in a mixing bowl with an electric mixer on medium to high speed for 30 seconds. | ||||
2. Add sugar and beat till combined. | ||||
3. Beat in egg, milk, lemon peel, vanilla, and, if desired, lemon extract till combined. | ||||
4. Stir in any remaining flour with a wooden spoon. | ||||
5. Stir in poppy seeds. | ||||
6. Shape dough into two 8-inch rolls. | ||||
7. Wrap in waxed paper or plastic wrap. | ||||
8. Chill for three hours or till easy to handle. (Best overnight!!!) | ||||
9. Cut the dough into 1/4-inch thick slices. | ||||
10. Place on ungreased cookie sheets. | ||||
11. Bate for 11 to 12 minutes or till edges are golden. | ||||
12. Cool cookies on wire racks. | ||||
13. If desired, spread Powdered Sugar Icing on flat sides of half the cookies. | ||||
14. Top with remaining cookies, flat side toward icing. | ||||
Powdered Sugar Icing | ||||
1. Stir together powdered sugar, vanilla extract and enough milk to make of spreading consistency. | ||||
2. Stir in a few drops yellow food coloring, if desired. | ||||
